Much like playing with Legos, this Lego birthday cake is fun and easy to build when you have the right pieces.
Bake the cake This cake mix called for three eggs, one cup of water and one cup of butter. I made one substitution to reduce the fat. A quarter cup of nonfat Greek yogurt was used in place of half of the butter. It was a small act of healthy in the face of a sugary birthday cake. Use a 9 x 11 or two 8 inch round cake pans to create your base.
Decorating Tip When decorating this or any cake, place two sheets of parchment paper under the bottom layer to catch crumbs and stray icing. Once the cake is decorated, just slip the paper out and the cake board is spotless.
Making the bricks A pound cake cut into different sizes was used for the Lego pieces to top this birthday cake. The pound cake was very easy to cut into perfect squares and rectangles. The pound cake was dense enough to hold its shape against the weight of the fondant. The pound cake cut outs were wrapped with red, blue, green and yellow fondant and topped with circle cut outs using a half inch cookie cutter tool.
Ready to use fondant makes cake decorating really fun. It still requires some precision and thinking ahead, but the results are smooth and impressive. Use a wooden or silicone fondant roller to roll the fondant into sheets. Place a pound cake cut out onto the fondant sheet. Use a sharp knife to cut the custom shape. Fold the sides over the cake and secure corners with moistened fingertips, sealing edges with your fingers. Dry hands on a towel to prevent mixing colors.
